This project, which started in 2016, is named by taking one character from each of the representative brands brewed by each brewery: 'Yamagata Masamune' from Mitobe Shuzou, 'Tatenokawa' from Tatenokawa Shuzou, 'Toko' from Kojima Sohonten, and 'Uonuma Otokoyama' from Otokoyama Shuzou. 1 go
A relaxed and sweet aroma reminiscent of fully ripe bananas from Fukushima Prefecture. The rich and beautiful fragrance is captivating. A smooth texture leads to a dense sweetness, complemented by a sharp acidity that tightens the flavor. The rich, dense texture possesses an exquisite lightness, allowing for exceptional drinkability. Enjoying the fruity flavor reminiscent of white peaches before swallowing leaves a pleasantly light aftertaste that lingers gently, concluding with a clean finish. It is of outstanding quality. Half a go.
The junmai sake polished to 55% using the rice 'Toyohai Rice' exclusively from Miura Sake Brewery in Aomori Prefecture has a rich umami flavor and is a well-rounded sake that you won't get tired of drinking. 'If it's not delicious, it has no meaning' is the standard of Toyohai. The delicate sweetness and elegant aroma of Toyohai Rice make it the best sake to enjoy with food. 1 go
Cloudy sake brewed with time and effort by brewers in Nara Prefecture. It is simply coarsely filtered from the mash of Namoto Junmai sake, so there is plenty of rice in the bottle. It has richness while the refreshing sensation becomes more pronounced with each sip. You will wake up feeling refreshed the next day. 1 go
The new sake from Yamaguchi Prefecture offers a medium body that allows you to enjoy the taste of high-quality rice for a long time. Additionally, it is made with a 'direct draw' specification that captures the fresh flavor of freshly squeezed sake along with a sense of gas, so the latter part of the taste is enveloped in a solid gas sensation. 1 go
The famous sake 'Kei' from Oura Sake Brewery, located in Matsue City, Shimane Prefecture, Akita Prefecture. Named for its aim to be a strong sake as clear as a mountain stream. Founded in 1872, Oura Sake Brewery, under the leadership of the sixth generation Ishihara Jokei, currently brews about 600 koku annually with six brewers. To allow customers to enjoy the sake in its original state, all products are unfiltered and only undergo a single pasteurization before bottling, with either nama sake or nama-zume being sold.
