The origin of the store name 'Fuji Ichi' comes from 'Ichi' meaning 'position'. It refers to the 'city' at the foot of Mount Fuji, where ingredients sourced from markets around Mount Fuji are gathered. 'Ichi' signifies the best hospitality in the area. The owner's hobby of 'road biking' is referred to as 'Fuji Ichi' when he rides around the foot of Mount Fuji. The name was chosen with the desire to let customers enjoy dishes made with ingredients from the foot of Mount Fuji, which the owner enjoys riding around. Healthy chickens raised by Aoki Poultry Farm are slaughtered at their own processing facility, and the chicken is processed and shipped on the same day. If consumed within 72 hours, the chicken retains its umami and juiciness without loss of inosine acid, providing a rich and juicy flavor. Fuji Ichi sources ingredients twice a week, including morning processing.
