Made with soba flour from Lake Towada, which spans Akita and Aomori Prefectures. It is produced using the 'super fine minus cold air grinding method' and processed into super fine whole grain flour at a cold air temperature of minus 20 to 40 degrees Celsius.
100% buckwheat soba noodles, made without wheat flour or yam, are rich in beneficial rutin, vitamins B1 and B2, potassium, magnesium, phosphorus, and other minerals, as well as linoleic acid and dietary fiber. They help strengthen capillaries, lower blood cholesterol, and promote digestive health. You can choose from soba dipping sauce, soy milk sauce, chili oil, or soy milk curry.

A hearty thick pork cutlet, coated in a crispy batter, sits generously on top of rice. The sweet and savory sauce made with soba dashi features a deep umami flavor, and an egg is added and simmered until it reaches a soft-boiled state before being placed on top of the pork cutlet. To allow for various textures such as crispy and fluffy depending on where you eat, the pork cutlet and sauce are intentionally not simmered together, and as time passes, the dashi seeps into the batter, allowing for a delightful change in flavor.
