The skewers are prepared fresh from raw meat, with artisans skewering only what customers will eat that day. It is said, 'Three years of skewering, a lifetime of grilling,' and great care is taken in the way each part is skewered to ensure the best grilling results, with artisans honing their skills daily. We add Mongolian rock salt, Rishiri kelp, dried shiitake mushrooms, fish sauce, and more, simmering them slowly to create a flavorful brine, which is then heated until the moisture evaporates, continuing to simmer on low heat. Once the moisture is gone, our homemade salt, rich in umami, is complete. Please enjoy. The shichimi togarashi, a supporting role that enhances the yakitori starring chili pepper, uses the medium spicy blend from Yawataya Isogoro, one of Japan's three major shichimi shops. Yawataya Isogoro began over 200 years ago when the first Kanemon started selling chili peppers at the Zenkoji Temple in Nagano Prefecture, and since then, it has become a well-known souvenir for visitors to Zenkoji. Experience the difference in umami and aroma within the spiciness.
