The owner, hailing from Kitakyushu, prefers the chewy udon of Fukuoka. The quest began to combine that chewiness with the firmness of Sanuki udon and the excellent dashi of Kansai... This is how the noodle-making started. For many generations, delicious noodles mean... the challenge continues. The udon is made using high-quality wheat from Kitakyushu called 'Chikugoizumi'. With a soft texture and excellent taste and aroma, it is gently crafted into chewy udon through a secret blend. Water content: 44% to 46%, salt concentration: 13% to 16%, boiling time: 15 to 18 minutes, adjusted for each season. Akishino Udon is named after Nara, as udon is often named after its local area and loved there. We wanted to give it a name related to Nara, so we named it 'Akishino Udon' in honor of the chef's hometown. It has become a beloved specialty udon originating from Nara.
【 Ibusuki Bonito 】Many people associate bonito flakes with Makurazaki. However, there are many bonito flake shops in Ibusuki, located in the southwest of Kagoshima Prefecture, and we have carefully selected handmade products. We use the finest bonito flakes, which account for only 1% of the total distribution. It's the best. 【 0.01mm Ultra Thin 】The bonito flake shaver we use was proposed by the third-generation president of a shaver company in Osaka. It shaves the bonito, recognized by Guinness as the hardest food in the world, into ultra-thin slices of 0.01mm. This ultra-thin bonito allows you to experience the original flavor of bonito directly. The aroma and taste provide an emotional experience. 【 Exceptional Dashi 】Using natural ma-kombu that is not commonly distributed and the finest bonito flakes from Ibusuki. This dashi, made from exceptional ingredients, is familiar to Kansai people. Even on its own, it is excellent, but the dashi for Akishino Udon is enhanced with an additional 0.01mm of bonito, adding depth to the flavor, making it truly an exceptional dashi.
