Beef and sliced burdock are simmered in light soy sauce and broth, then bound with egg. It is Yanagawa style, but there are no loaches included (laughs).

The satoimo was simmered in dashi made from kombu and bonito flakes, then left to rest overnight to absorb the dashi. Please enjoy the gentle flavor.
The daikon radish is simmered slowly in broth after being pre-cooked. It is served with Sendai fu and enjoyed with a rich miso. The aroma of yuzu adds a refined accent.

A Junmai Daiginjo sake distributed exclusively within Yamagata Prefecture. Not only is it rare, but it also falls into the category of extremely dry sake, resulting in a sharp finish while maintaining the flavor and richness of Junmai Daiginjo.
