Toji Soba is served in a bamboo woven ladle-shaped basket called 'Toji Kago', where small portions of boiled soba are gradually added to a warm soba broth containing chicken and duck minced meat, mountain vegetables, and mushrooms. It is quickly dipped into the broth, which enhances the flavor of the soba and stimulates the appetite. This traditional taste has been passed down in the village of Nobuki Pass for a long time. Additional servings are plus 1,250 yen per person. Extra soba is 750 yen (one serving).
