Starting in July 2014, we began certifying 'Mitsuboshi Wakasa Beef,' which is a brand of Wagyu from Fukui Prefecture with over 25 years of history. This beef has a particularly high content of oleic acid (over 55% in the fat), enhancing its deliciousness. Wakasa Beef is known for its fine marbling, delicate texture, and excellent flavor, and Mitsuboshi Wakasa Beef is a new brand of Fukui Prefecture Wagyu that offers even richer taste (aroma and texture).
Mitsuboshi Wakasa Beef is produced in farms that adhere to the animal welfare management standards set by national organizations, ensuring minimal stress for the cattle. The production is verified and certified by the prefectural authority (Livestock Health and Hygiene Office) among livestock farmers in Fukui Prefecture.
The quality standard for meat is that it must be beef obtained with a quality grade of 3 or higher and a marbling score of 4 or higher, as well as an oleic acid content of 55% or higher.
Oleic acid is a type of unsaturated fatty acid said to be good for the body, and it is the main component of olive oil. The higher the oleic acid content, the lower the melting point of the fat, resulting in what is known as a melt-in-your-mouth fat. This melting fat coats the tongue and interacts well with umami components, spreading the unique flavor of Wagyu beef throughout the mouth. Even with fatty Wagyu beef, a smooth and mellow aftertaste can be felt.
