In the Hida region, blessed with abundant timber since ancient times, there were people known as Yamakata-shu who engaged in mountain work. It is said that the dish they ate while secluded in the mountains is the root of this 'Kei-chan Yaki'. Kei-chan Yaki is originally seasoned only with salt, but at our restaurant, we also offer 'sauce flavor' and 'miso flavor'. Enjoy it with various toppings!
