A very rare ingredient, the Korean pheasant, is mostly consumed locally. It grows in the winter of Hokkaido, where winter temperatures can drop to minus 10 degrees Celsius. Pheasants raised in an environment of minus 10 degrees are rare nationwide, and the thick fat accumulated in the extreme cold produces a delicious broth. Additionally, pheasant meat is high in protein, low in calories, and low in fat. It is a body-friendly meat. If you don't eat it now, there may not be another chance.
When it comes to game from Hokkaido... it's the Ezo deer. The deer at the Northern Country Bar are sourced only from designated hunters. Where the hunter shoots and how quickly and accurately they can process the deer determines its flavor.
