The course features various seasonal dishes, each with a careful flavor. It starts with a tiger pufferfish rice porridge, and the pufferfish broth ponzu carpaccio is refreshing and excellent. The yam chawanmushi with the cream sauce of the snow crab is creamy and spreads a gentle umami. The fried oysters and the dish with yam are enjoyable with the fragrant coating and good texture. The black-haired wagyu beef tartare and the braised beef tongue are also rich and satisfying. The final beef bowl has an outstanding aroma and meat flavor, and even the rice grains are delicious.

Every dish is inventive, and there is a surprise in every bite. The mushroom chawanmushi is rich in aroma, and its creamy texture is delightful. The final beef bowl is packed with flavor, making it hard to put down the chopsticks. There are also many dishes using seafood and vegetables, with the squid in ponzu jelly and the Japanese-style risotto with aosa seaweed being particularly impressive. The fried items, such as the fried conger eel and the wagyu skewers, are crispy and pair well with the sauce. The presentation is beautiful, and the wide-ranging concepts of the course make for an enjoyable dining experience.
