This is a hot pot made exclusively with offal from Black Wagyu beef, an original dish from Umakaya. A luxurious collaboration of special soup made from the bones of local chicken, local chicken, and beef offal! Commitment to ingredients: only offal from Black Wagyu beef is used. For local chicken, we use Miyazaki Jidori hens. They are raised for more than five times the period of young chickens, nurtured with care and allowed to grow freely, resulting in the finest local chicken. For the soup, we use the bones of Miyazaki Jidori and Nagasaki Koshihikari rice, simmered for over six hours.

The Miyazaki Jitokko used at Umakaya is carefully selected from the female chickens raised by Mr. Oshioka, who was recognized as the number one producer after inspecting the breeding methods, chicken coop environment, and dedication to raising the chicks on-site. The 'Miyazaki Jitokko Thigh Grilled over Charcoal' is carefully grilled one by one after receiving an order, resulting in a crispy exterior and juicy interior.
