A whole young chicken is marinated for several days in a secret sauce, allowing it to absorb the flavors. After seasoning, it is stuffed with eight types of ingredients, wrapped in lotus leaves, and packed in clay, then slowly steamed in the oven for six hours. The resulting Beggar's Chicken is juicy and offers a delicate flavor with a blend of various aromas and umami. The name 'Beggar's Chicken' comes from a story in ancient China where a poor person stole a chicken and hid it in the ground. When someone unaware of this lit a fire above, a wonderful aroma wafted up from the earth... that is said to be the origin of the name. Therefore, the dish is called Beggar's Chicken, as it involves stuffing various ingredients into the chicken's cavity, wrapping it in lotus leaves, and packing it in clay for steaming. There are various methods to prepare it. In our case, we marinate a whole young chicken in a sauce made from Chinese soy sauce, Shaoxing wine, and Sichuan pepper for several days. The ingredients include wood ear mushrooms, bamboo shoots, pork, dried scallops, lotus seeds, and quail eggs. After briefly stir-frying with soy sauce for seasoning, we stuff the chicken, wrap it in lotus leaves, pack it in clay, and bake it in the oven for six hours. The slow steaming allows the chicken's juices to mingle with the ingredients, while the flavors of the scallops and pork infuse into the chicken, enhancing its taste. The combination of various aromas and umami creates a mysterious flavor. Contrary to its name, it is actually a luxurious dish meant to be enjoyed at banquets.
