At Saikura, we base our soba on 'Ni-hachi Soba', which consists of 80% buckwheat flour and 20% binding agent. The average ratio of machine-made soba currently in circulation is 50% buckwheat flour and 50% binding agent. The more wheat flour there is, the longer the cooking time, which can cause the aroma, texture, and nutrients to be lost. The cooking time for handmade soba is about 40 seconds to 1 minute. We deliver the aroma, nutrients, and texture of the soba directly to our customers.
80% of the buckwheat flour distributed in Japan is imported. Domestic flour accounts for only 20%, making it very difficult to secure and quite expensive. At Ayakura, we use 100% domestic flour. We source buckwheat flour from the regions that are considered to be the most delicious at that time. Please feel free to contact our staff for information about the day's source.
