Plenty of potatoes are added, cooked round, thick, and firm. That's the Spanish way! Our tortilla is baked in the oven for 40 minutes with potatoes, so the sweetness and umami are concentrated. Then mixed with eggs and cooked slowly over very low heat for 20 minutes to give it a solid thickness. It takes time and effort.
