This is a fisherman's dish originating from Chiba, made with local fish from Katsuura, which is popular even for lunch! It’s perfect as is for a snack, but be sure to try it with Katsuura-style vinegar! While mackerel is the standard for namerou, at Demekin, we season and serve the fresh local fish of the day (which may vary) based on its flavor and fat content.
This is a local dish from Chiba, where popular namekuro is wrapped in perilla leaves and grilled. The umami of the namekuro is concentrated, making it truly a 'sea hamburger' that rivals meat. It pairs perfectly with beer, as well as sake!
This is a local dish originating from Shirako Town in Chiba Prefecture. It is a bouillabaisse made with locally produced onions and tomatoes, and traditionally includes blue fish dumplings, but in our restaurant, we use a local fish dish called namerou. The tomato-based soup is rich in seafood flavor and also contains shrimp. It is a popular menu item at night, with some customers even ordering seconds. (The portion is for two people, approximately six servings.)

This dish features Katsuura's 'dried mackerel' that has been concentrated in umami using volcanic ash, making it perfect for pairing with sake. Enjoy it with yuzu pepper or mustard soy sauce.
Traditionally, this dish uses nanohana (rapeseed flowers) from Chiba, but depending on the season, it can be made with other greens in the Chiba-style mustard dressing.

Unlike regular tantanmen, this is a spicy ramen specialty from Katsuura that uses a soy sauce-based soup with onions and ground pork, along with plenty of chili oil, without using sesame. In our shop, we have balanced the sharpness of the spiciness while allowing the umami of the soup and the sweetness of the onions to be felt, with the spiciness gradually coming out afterward. (However, please be careful as slurping the noodles too much may cause choking.)
You can enjoy a set meal by adding a rice set to your favorite single dish. *Refills for rice are free for one serving.
This is a set meal featuring a fisherman's dish from the Boso Peninsula, where namerou is served as chazuke. At our restaurant, we prepare a robust dashi that does not lose to the flavor and umami of namerou. *The mini size is 900 yen.
