The quality of shabu-shabu is determined by the meat. All of it is processed according to the original standards of Shabu-Shabu On-Yasai, utilizing years of experience. Only meat that meets our strict production management and internal standards is used. To ensure you can enjoy it at peak freshness, the meat is carefully cut one piece at a time in-store. It is provided at a thickness that makes shabu-shabu exceptionally delicious.
We discuss with farmers to select vegetables that pair well with shabu-shabu and procure them. Some of these vegetables have been developed specifically for shabu-shabu. Additionally, we conduct a 'production area relay' without specifying a particular region, sourcing the most delicious vegetables available at that time.
We have added the ultimate white soy sauce that enhances the sweetness of the ingredients and hand-crafted bonito flakes 'Hand-Kazan Style Honkarebushi' made by skilled artisans to a dashi made from three types of seafood. This is a dashi that allows you to enjoy the natural umami of vegetables and the flavor of bonito at the same time.
A flavorful broth enriched with the umami of beef tail and Wagyu, simmered slowly with aromatic vegetables to bring out depth and fragrance. Adding some finely chopped green onions enhances the aroma and sweetness to your liking.
A refined flavor with a rich taste amidst a mellow sweetness. The more you shabu-shabu, the more it harmonizes with the umami of the ingredients.
A clear broth that enhances the natural flavors of the ingredients with abundant umami. It pairs exceptionally well with ponzu and sesame sauce.
Made using organic soy milk produced by a traditional method of soaking whole soybeans thoroughly and then squeezing them. By adding bonito and kelp broth, it becomes rich enough to create yuba, while still being a mild broth that pairs well with shabu-shabu.
A spicy and rich flavor made by adding chili peppers and gochujang to a broth base of chicken and seafood.
The rich soup that highlights the flavor of the tail pairs perfectly with 'beef offal'.
The deep umami of red sea bream is combined with 'Umami Sea Salt' from Setouchi, and elegantly finished with fragrant and refined Hokkaido Rishiri kelp and Yaizu dried bonito flakes.
A dashi made by combining grilled flying fish, bonito flakes, and dried sardines, enhanced with domestic yuzu, resulting in a refined and aromatic deep flavor.
