Shimarlabo Bis is a bistro located on the 9th floor of the Fukuya Hatchobori store in Naka Ward, Hiroshima City, where you can savor the charm of natural French cuisine. Owner-chef Mitsunori Shimamura is dedicated to using safe, seasonal ingredients, with a strong emphasis on local production for local consumption. In a calm atmosphere, each thoughtfully prepared dish can be enjoyed alongside local ingredients from Hiroshima. Dishes incorporating fresh seafood from the Seto Inland Sea and a variety of colorful vegetables grown through natural farming evoke new sensations with each visit.

In a calm space near the top floor of Fukiya, you can casually enjoy French cuisine. The chef utilizes safe and seasonal ingredients, making the aroma and colors stand out in each dish. The course structure flows smoothly from the starting amuse-bouche to appetizers, fish, and meat, keeping the excitement throughout. The soup made with fish from the Setouchi region has a deep richness, and the texture of the homemade salmon roe is delightful. The main meat dish is perfectly cooked, tender, and the umami spreads gently. Even the desserts and homemade bread are carefully prepared, allowing us to finish the meal feeling happy until the very end.
