At the EXPO2025 Osaka-Kansai Expo, shortly after the opening in April, we collaborated with the Osaka Chamber of Commerce at the Osaka Prefectural Pavilion (Osaka Healthcare Pavilion) to develop, display, and sell menus utilizing local Osaka ingredients. We offered a total of five types of menus, among which 'Zeppolini alla Osakano' is always included in our course, so you can enjoy it at any time. Although it is a spring limited item, we also include 'Osaka Cherry Blossom Honey Pudding' made with 'Osaka Cherry Blossom Honey' harvested in the famous cherry blossom spot of Tondabayashi City and local eggs from the same area in our spring course. The 'Noto Beef' used in the 'Regional Support SDGs Panini' is always included in the course, and 'Osaka Arugula' is guaranteed to be included during the harvest season. Please experience the rich flavors of Osaka's local produce!
In addition to ingredients from Osaka and the Kinki region, we offer Noto Beef from the perspective of supporting the reconstruction of Noto. We donated 20% of the sales from the menu using Noto Beef as a contribution to disaster relief. Donation recipient: Ishikawa Prefecture, received a letter of appreciation from the Governor of Ishikawa for the Noto Peninsula Earthquake Disaster Relief Fund in Reiwa 6. We are committed to continuing our support for the reconstruction of Noto.
We regularly handle wines from Osaka Kashiwara's Katahimo Winery, the oldest winery in Western Japan, which has been paired with the courses of Massimo Bottura, the chef of Italy's Osteria Francescana, which was ranked number one in the World's 50 Best Restaurants. The winery still has the oldest grapevines in Japan. At Nishideria, we always include Katahimo's Champagne fermentation method sparkling wine 'Tako-Shan' in our pairings.
