However, it is said that the first head of Mizuho Sake Brewery miraculously saved and preserved this black koji mold. 'Ouzake' is made using this historically significant black koji mold that survived the flames of war, and it can truly be called a 'phantom sake' filled with the history of Okinawa's hardships and the thoughts of the people who overcame them.
