Agu is a trademarked product, created by crossbreeding male native Agu pigs with female LW (Landrace and Large Yorkshire hybrids). While some people associate Agu with black pigs, most actually have a white base with black spots. The meat quality is rich in umami components (glutamic acid), has a tender taste, and features the marbling characteristic of native pigs, with a high content of sweetness and umami in the fat.
