A specialty of Yamaguchi Prefecture! “Horoyoi Saba”—mackerel raised on sake lees—features translucent flesh with absolutely no fishy odor, allowing you to savor its rich flavor and aroma on your tongue. Though its fat content rivals or exceeds that of “Torosaba,” it’s never cloying; its fragrant taste will make you exclaim, “Delicious!” without even thinking. Because it is carefully and meticulously raised in sake lees, the annual catch is limited to 3,000–5,000 fish, making this an expensive mackerel that not everyone can enjoy. Once you try it, you’ll never forget the taste. Since sake lees are known for their health benefits, this mackerel is packed with well-balanced nutrition. You can savor its rich umami flavor in a variety of dishes, from sashimi to grilled and fried preparations. The next day, your skin will be radiant; rich in DHA and EPA, it sharpens your mind, and the essential amino acids help keep your muscles supple! Please give it a try!
A course that combines the live atmosphere of “grilling”—one of SABAR’s strengths—with summery “garnishes and cold dishes,” making it a popular choice even during the peak of summer heat.
