It features a calm ginjo aroma, a soft and gently expanding subtle sweetness, and a pleasant lingering aftertaste. Best enjoyed chilled or at a warm temperature similar to human skin. Please savor this rare sake!
Rice used: Nagano Prefecture 'Miyama Nishiki' and 'Hitogokochi', polishing ratio: 59%. This special junmai sake is brewed by hand using rice grown in pesticide-free rice paddies alongside locusts and pond snails in the Asakana Gorobei rice fields.
Rice used: Saku City produced 'Miyama Nishiki', polishing ratio: 49%. A pure rice daiginjo sake brewed with organic rice cultivated in the Asakana Gorobei rice fields. Characterized by the rich flavor and aroma of high-quality rice.
Rice used: 'Miyama Nishiki' (❈ Handcrafted, pesticide-free, specially cultivated rice), with a polishing ratio of 40%. It is low-temperature aged, resulting in a soft and refined flavor. Known as 'Shinano no Nishiki', this sake offers a gentle ginjo aroma that you can enjoy chilled without getting tired of it.
Rice used: 100% 'Kinmon Nishiki' from Kijimadaira (rare variety), with a polishing ratio of 59%. While it has a basic light and simple flavor, it features the unique depth, fullness, and aroma of 'Kinmon Nishiki'. This sake can be enjoyed both chilled and warmed.
While bringing out the umami characteristic of junmai sake, the aftertaste is sharp and crisp, making it a dry sake.
