The Ichirino Kogen Hotel Roan's specialty is the Irori Charcoal Fire Course. We use only the best ingredients from the Hakusan-roku region of Ishikawa Prefecture, including A5 grade Hida beef, river fish from clear streams, gibier, organic fresh vegetables from local organic and pesticide-free farmers, rice from rice paddies inhabited by fireflies, and home-made rice cakes, all grilled over an emotional hearth in a 100-year-old house.

A beautiful sake from the satoyama! The broth from the iwana adds richness and sweetness to the sake, making it very mellow and delicious.
