The town of Bangemachi in Aizu has been famous for 'horse sashimi' since ancient times. Please enjoy the tender and mild lean meat with spicy miso. The miso used is Aizu's local miso.
When it comes to fresh wheat gluten, 'Kyoto's medicinal cuisine' is famous. Please enjoy the hot and crispy dish grilled over charcoal and topped with Aizu miso.
When it comes to seafood in Fukushima Prefecture, 'Onahama' is the first thing that comes to mind. It is delicious when fried, and the overnight-dried fish oozes with fatty juices. Searing the skin and serving it as sashimi or nigiri sushi is excellent.
I don't buy it at the supermarket. I am particular about homemade dried squid and take the time and effort to make it. The squid from Hokkaido is dried with its liver intact, and the spear squid from Kyushu is dried after being treated with salt.
We cut it into small pieces to keep the cost down. We always have 2-3 types of simmered fish available. We also recommend the grilled yuzu-marinated and grilled Saikyo-marinated dishes, which are cooked over charcoal.
