Yamazaki whiskey is characterized by the smoothness of Mizunara cask-aged malt and the strawberry-like aroma of wine cask-aged malt. The color is a reddish amber with a honey-like sweetness, and the mouthfeel is smooth with a spreading sweetness.
This is a single malt whiskey born from the ideal malts selected by blenders from the diverse original spirits held by the Hakushu Distillery. Enjoy its individuality, created by the overlapping of fresh, forest-like malts with a hint of smoky flavor and original spirits that provide complexity and depth. It features the delicate umami and softness of the barley material, along with a roasted barley-like toastiness, resulting in a rich and full-bodied flavor.
Nature Forest Barley is a barley shochu raw spirit made using water from Yakushima and barley from Kagoshima, crafted by hand. It features a rich, sweet, and roasted aroma reminiscent of barley chocolate, with a smooth, honey-like flavor. Its deep and soft taste evokes the forests of Yakushima.
This item is packed with the brewer's commitment, using naked barley as the raw material and a homemade pot still for distillation. Its richness reminiscent of barley chocolate is appealing, and the subtle sweetness and bitterness felt amidst the roasted barley's aroma add depth to the flavor.
The characteristic of 'Demon King' is its refreshing taste that does not evoke the typical 'sweet potato' aroma of traditional sweet potato shochu, along with a floral and fruity fragrance that is far removed from its ominous name, and a rich aftertaste. In sweet potato shochu, white koji is mainly used to bring a gentle aroma and soft flavor, while black koji tends to produce a rich aroma and strong taste. However, 'Demon King' uses yellow koji, which is used in sake. This creates a vibrant aroma reminiscent of ginjo sake.
Sato Black is made using black koji and the Satsuma sweet potato variety called Ougon Senkan. It has a robust body and a rich flavor that spreads powerfully. After that, it refreshes the palate with an excellent crispness. This is a recommended item for days when you want to fully enjoy the pleasant aroma of the sweet potato shochu.
Since its establishment, this handcrafted jar fermentation has been passed down through traditional methods using koji making in the koji room, fermentation in jars, and traditional wooden tools. The authentic shochu 'Yakushima Great Nature Forest Sweet Potato' is made at the 'Yakushima Traditional Brewery' using high-quality sweet potatoes from Yakushima and soft water from Yakushima. It has a rich aroma influenced by the yeast 'Brewery Spirit' that has settled in the brewery over many years, and a full-bodied flavor. This is a handcrafted sweet potato shochu brewed with traditional famous water.
