The aroma of charcoal spreads gently in the Kansai-style grilling method, and the savoriness is at its best. The skin is crispy, while the meat is moist, tender, and full of flavor. It's surprising that it doesn't feel dry even though it's grilled without steaming. The sauce is mildly sweet, with a sharp soy sauce aroma. The small bones are not bothersome, allowing for a pleasant experience until the end. The balance of aroma, texture, and sauce is excellent, and it's no wonder it's called a specialty.
