One of the ingredients that is cherished in the world of gastronomy as a luxury item in Europe is the hokorohorodori chicken. This has been improved over the past seven years on Yoron Island in the southernmost part of Kagoshima, resulting in the wonderful meat quality of the hokoro-horo chicken! The depth of flavor may turn your concept of chicken upside down! We stuffed this with herbs and other ingredients and oven-baked a whole bird with great power.

2008/Villa Crespia/After fermentation in stainless steel tanks with Chardonnay, aged for over 30 months with yeast, followed by secondary fermentation in the bottle. Concentrated aromas of ripe apples and citrus. A limited production of only 1,123 bottles of this Riserva after 14 years of aging.
2013/Villa Crespia/Top cuvée of Pinot Nero Muratori. The Riserva, released only in good years, has an alluring aroma and rich fruitiness, with creamy bubbles and an impressive length of finish. Over 70 months of aging in the bottle.

2018/Vie di Romans/This Pinot Grigio offers a rich aroma of fruits such as white peach and apple, with a full-bodied fruitiness and a creamy texture. There is a slight tannin presence that gives a rounded impression. Despite being white, it has an orange-tinted color.

It has a strong and thick fruit flavor, with gentle and beautiful acidity and minerals, creating a well-balanced taste.・Hide Limited Edition Syrah…22,000 yen 2017/Bulichella/A treasure of Syrah design, owned by Hidetaka Miyagawa, the founder of Italdesign. His son manages F1. This wine is one of my memorable wines as I prepared a meal for the unveiling event at the winery when it was released.
