In Yaizu City, Shizuoka Prefecture, there is the Yaizu Festival, said to be the most vigorous festival in the Tokai region. Although it is called a 'vigorous' festival, the term 'vigorous' here does not mean rough or violent, but rather simple, pure, and pristine. It is shaped by the reverence for the deities, following the traditions of our ancestors, and means 'a festival that strictly preserves and passes down that spirit and form to the present day.' It embodies the history of the local fishermen and the people of Yaizu who have lived alongside the sea. In addition to a procession of over 300 people playing the roles of deities, thousands of young people in white garments boldly carry two portable shrines, creating a 'dynamic world.' This grandeur is what earns it the title of 'the most vigorous festival in the Tokai region.' The highest-ranking deity among them is Sarutahiko. The person assigned to this role secludes themselves in the shrine a month in advance, purifying themselves, and during the festival, they must not speak at all. Thousands of people surround the deities, including Sarutahiko, and parade through the streets. In August, the year the head chef from Yaizu opened the sushi restaurant, while carrying the portable shrine during the Yaizu Festival, he suddenly thought of the name 'Sarutahiko.' The simplicity, purity, and pristine nature of the vigorous festival inspired him to prepare sushi with that same spirit. Having grown up familiar with the Yaizu Festival, he felt a strong connection to Sarutahiko, the highest-ranking deity known to all Yaizu locals, and decided on this name. There are various legends and shrines dedicated to Sarutahiko, but the name 'Sushi Sarutahiko' was chosen from the old tales, festivals, and history related to Yaizu.

Uses water from the Kurobe River alluvial fan, one of Japan's top 100 famous waters, for brewing. 'Where there is famous water, there is fine sake.' A refreshing sake that is easy to drink and never gets tiresome.

Nonami is produced by the long-established 'Oimatsu Shuzo', which has been in business for over 100 years in Kagoshima. It is located in the same Osumi Peninsula as 'Mori Izo' and 'Maou', using the same water from the Kirishima mountain range.
