Let me try Becas... I had been asking for it since last year. On the day of the reservation, the sommelier told us, "We have some Scottish Becasse in very good condition today..." (Gulp!). It was a very good one. The head that sits on the plate, split in half, is huge. And it's fresh. The distinctive aroma of gruyere becasse is not so strong. It may be a matter of timing, but most of the becasse I've had at other French restaurants had a certain degree of maturity, or, to put it better, were highly aromatic, and some people would say they smelled bad, so this was also fresh in a way. I immediately split the becas head in half and ate it using a teaspoon. Now it's time to suck it up. I fell in love with the silky texture and elegant sweetness of the brains. Next up is the peach. Slightly well-done, but the meat is moist and the aroma is just right. We sucked it down to the bone. It was delicious! Now for the main dish, the breast meat, a whole roasted chicken. The heaped up breast meat seemed to symbolize the king of gibier. The surface is just the right amount of golden brown, making me drool. A knife is inserted into the breast. A unique aroma rises from the meat. The meat has a wonderful texture that is cut through with the knife! The color of the meat is full of the rare feeling I love. I praise myself for choosing this restaurant for the deliciousness that spreads from the first bite. The meat is cooked properly, which is hard to imagine from the color of the meat. It must have been cooked slowly at a low temperature. Thanks to the exquisite cooking, the meat was juicy and tender, without the dryness that is often associated with breast meat. The king of gibier, becasue it is here! The chef's passion for gibier cuisine is evident in his careful preparation. Sure, you have to pay extra, but it would be more than double the price if served at a restaurant in the city center. I am glad to be alive. Let's work hard tomorrow. (I bet the aged becasse would be delicious, too.)

Based on ingredients from Oita, Hida beef and seafood from Kanazawa are cooked beautifully. The fish dishes are so exquisite that it could be said that he is a magician in terms of saltiness, and he makes the most of it to add even more sensitivity. The grilled skin and the moist and fluffy meat with just the right amount of salt bring out the sweetness of the ingredients! Imai also specializes in gibier, and there is no doubt that you can order any gibier dish you want to eat at Imai! The quantity of food may seem small for young people, but it is more about quality than quantity.

I wanted a certain memorable gibier dish to be recreated, so I went around to many places, but this is the only place that reflects my taste for gibier so well. I was so impressed that I have been hooked ever since. The chef is a magician of texture and saltiness, and I think his skill is considerable.
