In Korean, 'Teji' means pork, 'Kk' refers to soup, and 'Pa' means rice. It is a simple dish where rice is added to a soup made by simmering various parts of pork. The key to the flavor at this restaurant, 'Henboku', is the clear and light soup that has no unpleasant odor. It is simmered for a long time, giving it a deep flavor. The pork cooked in the same pot is surprisingly tender. The soup of 'Teji Kkupa' itself is very mild and light, so you can add the condiments served alongside to season it to your liking. While it may vary slightly from place to place, the standard condiments include salted shrimp, garlic, chives, chili peppers, kimchi, and salt. One of the features of 'Teji Kkupa' is that you can create your own variations and seasonings, so be sure to try making your own version of Teji Kkupa. <How to eat> It is traditional in Korea to add the chives served as a side dish into the soup and mix it before eating. When the chili-based condiment on top of the soup is well mixed, the soup turns red and becomes slightly spicy. If the flavor is too weak, you can adjust it with kimchi or salted shrimp.
