A representative of red miso, it is one of the three major misos in Japan alongside Haccho Miso and white miso. Generally, it has a longer aging period than white miso and a spicy flavor. It is characterized by a bright red color and a moist luster. Due to its refreshing taste that brings out the umami of soybeans, it pairs well with any dish. In our shop, it is used in grilled miso rice balls and miso soup.
At Kozaki Fisheries, fishermen determine the best 'season' when the oysters are plump and most delicious. The oysters are soaked in gel ice at -1.9°C for a certain period to age them (triggering a self-defense response in the cells) and then frozen, allowing you to enjoy oysters with their rich flavor preserved all year round. Our rice uses 'Hitomebore', which was born in Furukawa, Miyagi. Hitomebore is resistant to cold damage, and thanks to that, it has a strong stickiness and a very good taste and aroma.
The famous deep-fried tofu 'Triangle Fried Tofu' from Mt. Tegi is served here grilled to a crisp over charcoal. Grilled with natto is also recommended! Please be sure to try it at least once.
Niigata Prefecture Sea Salt. Water is drawn from the coastline known as 'Sasagawa Nagare' in the northern part of Niigata Prefecture, combined with the extract of a seaweed called Honda-wara, and slowly produced over time with a large amount of firewood. Its characteristics include a deep brown color and a moist texture, rich in the umami of seaweed and minerals. It is used for tempura and rice balls. It is also available on the table for your preference. Sashimi Soy Sauce.
