This is a sweet potato shochu carefully brewed with black koji, using high-quality water from the Kirishima mountain range and sweet potatoes (Kogane Sengan) that have been polished and processed at a facility near the sweet potato fields after harvest. It is brewed in clay pots and was aged in these pots for about 8 months before being released from the brewery.
The clear and rich water selected as one of Japan's famous waters is essential for sake brewing, creating the mellow flavor of <Miyake>.
