We have made a gorgeous dish by tempura-frying a whole Awaji Island onion and garnishing it with organic calendula petals from the local area. The onion, fried slowly at low temperature for about 10 minutes, changes in texture from crispy on the outside to meltingly soft towards the center. Enjoy the flavor of the Awaji Island onion as you dip the firm thin udon noodles in the dashi broth infused with the umami of the onion.
