A healthy cocktail that uses plenty of fresh seasonal fruits and spices without relying on manufactured liqueurs. It does not use illegal distillation or dangerous liquid nitrogen, and the infused spirits are kept minimal to accommodate non-alcoholic cocktail options in line with the wellness trend. Therefore, the term 'casual' is intentionally used.
There is a reason we opened as a non-smoking establishment to create a space where you can enjoy the aroma, stemming from our desire to create a bar focused on coffee. The coffee cocktail, which has now become popular worldwide, is one of our main offerings. Our bartender, Igarashi, is a popular barista active in the Tohoku region, known for producing welcome coffee served to customers at places like Fujisaki Department Store and Bvlgari.
Our shop does not stock 'soda'. We use different types of water to create carbonation. While we have a limited selection of whiskey, highballs have become popular recently, so we pay particular attention to the carbonated water. Commercial carbonated water is based on pure water, which gives it a clear taste, but it tends to have a slightly stronger sour flavor. We use natural water, which has a mellow taste, and our homemade machine can fill with carbon dioxide up to 6 atmospheres. In a short time, we can achieve carbonation levels higher than commercial products (which are around 3 to 3.5 atmospheres). While strong carbonation may not be necessary for high-quality whiskey, being able to control the strength of the carbonation is very convenient. By the way, we also do not stock ginger ale. We create ginger ale by blending spices after receiving an order. During this process, the carbonation machine is also utilized. We can serve carbonated water as service water, so please feel free to ask.
