One of the staple foods of South India, chapati is made from whole wheat flour, rolled out into a round shape and cooked. It is filled with spiced chicken and other ingredients, rolled up, and can be enjoyed as a snack with drinks, similar to tacos.
Enjoy a crispy, fried ball filled with a mixture of ingredients such as potatoes, lentils, spices, and mint chutney, generously topped with a tangy, spicy, and slightly sweet soup made from a blend of 'tamarind water' and 'chili water'.
A small spicy potato croquette from South India, fragrant with coriander and cumin. The coating is made with besan flour (chickpea), making it very healthy. Enjoy it with coconut chutney.
The Hyderabadi style involves sealing raw meat and rice together with a dough made from kneaded wheat flour, allowing the flavors and aromas to be locked in. This is prepared in a way that enhances the original taste of biryani with a 'dum style' cooking method. It is traditionally enjoyed with a spiced yogurt called raita. Please allow some time for it to cook.
Similar to dosa, this dish is made from a batter of urad dal (black gram) flour and rice paste, mixed with vegetables such as onions, tomatoes, and bell peppers, and then cooked. It is a South Indian-style savory pancake, loved by many vegetarians, along with idli, a steamed rice flour cake, and medu vada. ◇ Since it is slowly steamed and cooked, it will take a little time.
The batter is made by fermenting a mixture of urad dal (black gram) flour and rice into a slightly sour paste. When cooked on a thick iron griddle specifically for dosa, it turns into a crispy and appetizing dosa crepe. Filling the triangular dosa with spiced potato stir-fry completes the Mysore Masala Dosa. Enjoy it with medu vada, which are fried donuts made from lentil flour, and two types of chutney sauces.
Please enjoy by mixing mashed potato croquettes with fresh vegetables such as onions and cucumbers, along with dahi (yogurt).
