For the main dish, deer from the mountains in the northern part of Kyoto. The meat is tender and light, and is roasted at a low temperature to bring out its full flavor. The red wine sauce adds flavor and acidity, and violet mustard is added to taste.
For the main course, beef rump, raised naturally and spontaneously in the vastness of Australia, is simply roasted and served with a generous amount of Argentina's classic chimichurri sauce (parsley, spices, and vinegar).
For the main dish, a shoulder loin of Kyoto's brand pork (Tanba Kogen Pork) The sweetness of the fat and the fineness and flavor of the meat are wonderfully moist and cooked to perfection. Charcuterie style with a robeur sauce with the aroma of cornichons, onions and herbs.
A sharing style welcome and farewell party course served on a platter. Seasonal dishes are arranged on a platter and shared by everyone. Please enjoy the time in harmony and the food while surrounding the star of the show.
