There are five tastes that are perceived by the human sense of taste: sweetness, bitterness, umami, sourness, and saltiness. In fact, the only taste that is not found in sake is saltiness. Adding salt, a taste that is not present in sake, improves the balance of the flavor and makes it taste better. The salt is natural salt made from seawater near the brewery.
