Shinkame Brewery's sake — For those who love it, please enjoy — Saitama Prefecture, Hasuda City, Shinkame Brewery. If you are looking for a light and dry taste, I apologize. The main feature is the umami of the rice. It is only when warmed that the sake is complete. As the temperature rises, the contours become clearer. Rich umami derived from aging. It truly shines when paired with sweet and spicy snacks. As a food sake, it does not tire you out until the end. There are 15 varieties in total. Each has a strong personality and is not easy to understand. That is why those who get hooked go deep. I will be honest. It is not suitable for those who like light and dry sake. For a night when you want to step into the world of warmed sake. Shinkame is not a shortcut, but the main line. Unagi (eel) and white grilled × Shinkame (warm) If you are going with just white grilled eel and salt, Shinkame is best served hot. The umami of the rice complements the sweetness of the eel without overpowering it. A little wasabi enhances the aged flavor. The moment the skin is crisped on a charcoal grill is the perfect time to pair. When you raise the temperature of the warm sake a notch, the roasted aroma and rich umami clash head-on.
