Various types of fish are caught in Kushimoto throughout the seasons, including well-known fish like sea bream and bonito, as well as lesser-known varieties such as dragonfly fish, soma, mandarin fish, umeiro, and komakami. We have sourced these fish, whether wild, farmed, famous, or obscure, based on the owner's belief in their deliciousness. We have named these fish 'Itsugyo.' Branding was established in 1991 through the incorporation of carefully selected bloodlines. This is Wagyu that has been raised in the Kumano region of southern Wakayama Prefecture, either on farms designated by the Kumano Beef Certification Committee or within Wakayama Prefecture. More than half of the cattle are raised to a shipping age of over 24 months, and the meat is produced from black-haired Wagyu. The meat has been graded A3 B3 or higher by the Japan Meat Grading Association, with a fine texture, tenderness, and excellent flavor.
