When it comes to dried fish, salt-dried and mirin-dried are well known, but in Obama, a soy sauce-based marinade is quickly soaked and dried, making the rare 'soy sauce dried fish' common. When grilled, it emits an appetizing aroma of soy sauce, and the juicy umami spreads throughout the mouth.
Heshiko, a traditional food from Wakasa, is made by pickling mackerel in salt and rice bran and then fermenting it. Because of its simple process, the quality of the ingredients and the dedication of the maker create differences in flavor.
