Grilled sea bream and other dishes
This course is a Shamo nabe course in which the whole Tokyo Shamo is served! The soup is made from the guts of the shamo, so it is rich in collagen! Please enjoy it with our homemade ponzu (Japanese citrus juice) and wari shoyu (soy sauce), and condiments. In addition to root vegetables such as burdock, mushrooms and lotus root rice cakes, tomatoes add a sour accent to the nabe. Shamo meat is mainly thighs and thighs, but as we buy in whole birds, we sometimes include white meat, hearts, gizzards, etc. For the final meal, the shamo is served tamajime (a ball-jime) on top of rice in the style of oyako-don (chicken and egg on rice). The eggs used for tamajime are from a rare breed of chicken called "Gotou Sakura," which accounts for only 4% of the total amount of eggs distributed in Japan.
