Echizen Gani (Echizen Crab) is one of the most famous restaurants not only in Fukui Prefecture, but also in Japan. The chef, Mikio Omori, has been keeping the restaurant's curtain for many years as the fourth generation and still goes to the market every day to purchase the best quality crabs that he can find with his own eyes. The only way to cook crab is to boil it. He puts his whole heart and soul into this boiling process and pays close attention to the amount of salt. The crab served in this way becomes a super dish with the original flavor of the ingredients condensed.

After that, we wandered around the neighborhood for a bit and went to a cheese dock store that will open on 5/1 near the bike race track!

The cheese was stretchy and delicious but I was so hungry😂.
