The noodles are made from rare wheat produced in Itoshima, Fukuoka Prefecture, and are freshly prepared every day. The broth is a blend of high-quality bonito flakes from Makurazaki, Kagoshima Prefecture, and flying fish dashi from Nagasaki Prefecture.
