Trattoria 'Gaffurio' is located in a back alley slightly away from the station in Milan. This restaurant was opened by Naoki Shibuya, who trained here and was allowed to use the name of the restaurant by the owner-chef, Aldo Russo. The restaurant is committed to using authentic ingredients, including Italian-imported salt, Takanotsume (a type of chili pepper), and Tuscan virgin olive oil, as well as locally sourced ingredients such as Aomori garlic, smoked bacon from Kagoshima's Chami pork, and Han Kenmi eggs from chickens raised on herbal feed, along with fresh seafood directly shipped from fishermen in Hirado, Nagasaki. The base soup for all dishes uses the king of Italian mushrooms, porcini, Kishu jidori chicken, Rokko water, five types of vegetables, and four types of herbs. The proud pizza dough is directly taught by Aldo, the owner of the main store. However, while the dough in Milan is a voluminous bread type, it has been adapted into two types—thin crust and pie type—without changing the ingredient proportions to suit Japanese tastes. When Aldo visited Italian restaurants in Japan, he felt that 'many restaurants are too focused on recreating Italy and have forgotten the essence of Italian cuisine, which is to enjoy eating.' This led to the proposal of creating a restaurant where one can casually enjoy meals mixed with the goodness of Japan. 'Japan's characteristic is that we can create various variations of fish dishes richer than in our home country due to the abundance of fresh seafood. I want to be a catalyst for dishes that will become a trend across Japan,' says Shibuya. He also takes customer feedback and opinions into account. For example, the two types of risotto and pasta in the photo are original dishes that were developed through trial and error based on a request for 'Italian-style sobameshi.' As a chef, he wants customers to eat as soon as the dishes are served, but he also hopes they will enjoy chatting and wine while dining at their own pace. The solution to this dilemma is rice that has been improved for making delicious risotto. It maintains its al dente state for a long time, so even after some time has passed since it was made, it remains delicious. It pairs excellently with handmade pasta and is one of the restaurant's proud offerings.
