Using fresh rock oysters from Noto, we topped them with a ponzu jelly made with Kanazawa yuzu. The jelly contains Kanazawa gold leaf, providing an outstanding impact.
Timo Vermentino (White Wine) is a white wine from Puglia, Italy. It features a refreshing aroma reminiscent of citrus and white flowers, with a crisp taste that has a mineral quality. The pleasant acidity balances the rich umami and creamy texture of the Noto rock oysters, leaving a light and clean finish.
Junmai Ginjo KZ Chikuyou, a Junmai Ginjo sake produced by Kazuma Brewery in Noto Town, Ishikawa Prefecture. It features a clear acidity and light umami, with a refreshing mouthfeel that harmonizes naturally with the milky richness and intense umami of Noto rock oysters, enhancing the flavors of the ingredients while leaving a clean finish.
