The original 'Hinai Chicken' that forms the basis of Hinai Chicken was designated as a natural monument in 1942. In 1973, breeders, hatcheries, and processing companies came together to cultivate and improve this small and extremely difficult-to-raise chicken, creating what is known as 'Hinai Chicken.' In our store, we only handle products from (Kabushiki Kaisha) Honke Hinai Chicken, which is considered to be the highest quality among the many producers of Hinai Chicken.
The name and registered trademark allowed only for the meat and eggs of Nagoya Cochin produced by members of the Nagoya Cochin Promotion Association from the breeding chickens supplied by the Aichi Prefectural Livestock Comprehensive Center. It is a dual-purpose breed of eggs and meat that is a specialty product of Nagoya. It is also famous as one of Japan's three major native chickens. Although it grows relatively small compared to other native chickens, it is popular for its firm meat quality.
This is a local chicken produced mainly from breeding stock imported from France. The entire process, from the introduction and raising of parent birds, collection of breeding eggs, hatching of chicks, fattening, to processing, is carried out consistently. The Awa Oidori Chicken is a high-quality meat chicken developed by the Tokushima Prefectural Agricultural, Forestry and Fisheries Comprehensive Technology Support Center Livestock Research Division, which has been bred from the red-bamboo strain of game fowl that has been raised in Tokushima Prefecture, the home of the 'Awa Odori' dance, for a long time through continuous improvement efforts.
Among the domestic indigenous breeds (local chickens that have been around for a long time), the Shamo, which is said to be the most delicious, and the Sazanami, which contains a lot of umami components such as inosinic acid, are combined with the meaty white Plymouth Rock to create 'Hakata Jidori'. It has a unique chewiness characteristic of local chickens, and the umami increases the more you chew, along with a finely textured meat quality.
