Garlic produced in Ishigaki Island. It looks like it has roots growing out, resembling a beard, hence the name Hige Garlic. In Ishigaki Island, garlic is grown hydroponically, so the roots do not get tangled in soil, allowing you to eat the entire root. Moreover, because it is hydroponically grown, the pungency of the garlic is reduced significantly, making it an excellent garlic with very little odor.

Super rare part! This is sashimi made from goat testicles sourced from Ishigaki Island. First, I want you to understand that this is by no means a bizarre food; it is a legitimate ingredient with historical and cultural significance in Ishigaki. However, goat testicles are extremely rare! Goats are bred and raised for food on Ishigaki Island, but males are castrated shortly after birth to maintain meat quality. Therefore, normally, there are no fully grown goat testicles, but for breeding purposes, one out of several dozen males is raised with its testicles intact to become the breeding male. This goat testicle can only be obtained when it has fulfilled its role and is slaughtered. Do you understand the rarity? Of course, like goat meat, there is no unpleasant odor. It has a texture similar to collagen. I hope you will give it a try. *Availability may vary depending on supply conditions.

Imuge from Seifuku Shuzo. During the Ryukyu Kingdom era, when awamori was a luxury item, common people distilled it from sweet potatoes at home to make Imuge.
