In this creation, we have simply composed it with only the essential parts that truly enhance the peach from a multitude of parfait ideas. It features ice cream made with high-quality frozen oolong tea, lychee and milk ice cream, herb jelly, fromage blanc curd, and sautéed red peaches and raspberries, all respecting the elegant sweetness and overflowing juice of white peaches, resulting in a balanced and elegant overall presentation. In this version, we beautifully arrange mango on top like a bouquet, along with other tropical fruits such as lychee, pineapple, banana, and passion fruit. The exotic theme is accented by the refreshing sensation of herbs and the idea of spices, creating a deliciousness that unfolds without getting boring. Please try the combination of the savarin prepared at the bottom and the Miyazaki mango served in a glass to fully appreciate the lingering taste of the parfait. There has never been a savarin this refreshing, juicy, and fun.

Enjoy the noble aroma and melting texture of Shizuoka Prefecture's musk melon, a red-fleshed melon known for its sweetness and rich flavor. The two high-quality types of melon are ripened in a dedicated cellar and will be served to you at the perfect eating stage. There was a time when I thought that ripe melons didn't need any embellishments, but now I believe there is no other theme that can match the delightful pairing of ingredients with melons. In this creation, different charms such as lychee, almond, and citrus peek out from the glass, and they pair beautifully with rich cream danjou and lemon mousse, capturing the dripping juice perfectly.
