Enjoy the seasonal delicacies with the famous firefly squid and sashimi of fresh fish from Toyama Bay. The course begins gently with kombujime of thin bamboo and asparagus, followed by fried spring vegetables and prawns. Saikyo-yaki grilled Spanish mackerel is fragrant, and the refined richness of the dish is layered with white fish in a white shrimp soup stock ankake. The dish concludes with takikomi-gohan (rice cooked with clams and bamboo shoots), allowing you to relax and enjoy the afterglow of spring.
